The Cicogna estate, nestled in the Colli Berici Hills of Vicenza, Veneto, is the cradle of this exceptional Cabernet Sauvignon. With an alcohol content of 14% and a mere 2 g/l of residual sugar, it presents a deep purple hue, evolving into garnet red as it matures. The intense aroma is a delightful blend of spices and ripe red fruit. On the palate, it unfolds as a full and velvety experience, revealing hints of woody undergrowth, elegant tannins, and a lingering finish of vanilla-infused red berry fruit. The soil, rich in iron, clay, and limestone, imparts unique characteristics to this wine.
This Cabernet Sauvignon, aged for 20 years on average, undergoes meticulous harvesting in mid-October, employing the Guyot training system. The winemaking process involves a 10-12 day fermentation period with the grape skins in stainless steel tanks at a controlled temperature of 26°C/78.8°F. Following this, it matures for 12 months in French oak barrels and further refines for 6 months in the bottle.
Ideal for pairing with roasts, such as roast beef Florentine or roast pork, and complementing game dishes like rotisserie-grilled leg of venison, this wine also harmonizes with a variety of mature cheeses. The wooden cork seals a 750 ml bottle, offering a nuanced and rich expression of the Cabernet Sauvignon varietal.
